Portions for 2 servings:
1 courgette
4oz minced meat
2oz oatmeal
1 onion
4oz tomato pulp in dice
1oz Swiss cheese
1 tbsp olive oil
Salt
10oz cooked white rice (4oz of dry rice)
Boil water in a large pan, salt, add the courgette cut in two along its length. After 15mn, check how cooked is the courgette with a pointed knife. When they are cooked, remove them from the pan and spoon out the seeds.
Heat up the olive oil in a pan. Cut the onion in small pieces and cook in the pan until coloured. Add the oatmeal and fry until slightly grilled then add the tomato pulp. Boil the the oatmeal has absorbed some of the tomato and remove from the fire. Add the minced meat and mix with a fork.
Fill the courgette halves with this stuffing, cover with grated cheese and grill in the oven.
Serve with rice.
